What’s a Fuzhou Oyster Cake, sometimes called a “UFO Oyster Cake”?

Oysters are commonly found in Fuzhou during winter times, and the locals there would use it to make Oyster Cakes.

The Fuzhou Oyster Cake consists of a rice-based fried batter encompassing moist minced meat, chopped oysters, crunchy peanuts, and coriander.

Looking like a small ‘UFO’, the snack is typically fried in small batches to ensure freshness, resulting in both chewy and crispy textures.

You would find such as stall at Maxwell Food Centre in Singapore.

Established in 1962 by Madam Pang Siew Ting, the family-run business serving this just one item has also been recently included in the Michelin Guide Singapore.

The business has been passed on to the next generation.

Found at $2.50 per piece, the bater is made from rice grains soaked overnight and ground with flour to create a thick, gooey consistency.

The fillings include minced meat, chopped oysters, prawns, and cilantro.

A spoonful of batter and some peanuts top off the cake, and then deep-fried. Lots of effort.

The end result is a snack that is not only rich in ingredients but also in heritage and tradition.

The treasure comes when you take your first bite, revealing a soft, savoury inside of oysters and minced pork.

I did find this quite oily, and outer layer too dark brown. If it is less oily, I would take two at a go.

It is understandable that with time, the size and oyster fillings of the cakes seem to have been reduced, flatter than before.

Biting into these oyster cakes still evoke childhood memories for many.
